Nicole Marie Griatzky, 46, of Whitesboro, passed away unexpectedly on March 14, 2026.
Nicole was born in Freehold, New Jersey on October 31, 1979, and later moved and graduated high school from Farmington Hills, Michigan. She went on to earn her degree in Business Administration and Russian studies from Dickinson University, and she lovingly shared her knowledge by teaching her children Russian at home.
Nicole will be remembered for her passion for cooking and baking, especially for her family. She took pride in creating birthday cakes for each of her children, bringing their ideas to life. She also enjoyed making meals from scratch, often tailoring recipes to each child's preferences and leaving notes in her cookbook about how they liked them best. Her recipes will remain a lasting reminder of
her love.
A warm and loving presence, Nicole treasured quiet afternoons and evenings cuddled up in a big heated blanket with her daughters and their dog. Nicole enjoyed spending days at sports games watching her two younger daughters play on the field or on the court. She also loved the thrill of a ride in her Mustang, music blasting, with a little bit of speed. Her family remembers her as someone who spoke her mind (with colorful vocabulary), liked trying her luck with scratch-offs, could braid hair beautifully, and had a special love for lilacs,
butterflies, and life's simple moments. A special memory for her children is going to Long Beach Island, waking up early to watch the sunrise at the beach, and collecting seashells while listening to the sound of the waves lapping against the shore.
Nicole is survived by her children, Alexei, Kalissa, Kira, and Anisia Zaikoff, whom she cherished deeply and was immensely proud of. She also leaves behind her mother, Mary Rymko; her sister, Michele (Shane) Rumbaugh and her partner, John Lindig.
Nicole is preceded in death by her father, Nicholas Griatzky.
Nicole will be laid to rest in a ceremony at Holy Trinity Monastery on Friday, March 20 at 1:30 pm. Funeral arrangements under the caring guidance of the locally owned and family operated Vincent A. Enea Funeral Service (next to Hannaford Markets)527 E. Albany St., Herkimer, NY.
